longer days, good eats, and a soup recipe
Happy spring, everyone! We've been soaking up the longer days and getting outside more. Park days and picnics are calling! CTB #2 is 4 months old now and about to start solids so it’s been exciting. Here's a little recap of what we've been up to. And don't miss our Pork and Daikon soup recipe at the end!



Coffee shops have become our go-to family outing. CTB #1 is in it for the pastries, Wes and I get our caffeine fix, and CTB #2 is just happy to be along for the ride. The city has so many great spots, but we keep coming back to Coffee Movement, Juniper, and Andytown.


And now for the recipe. This Taiwanese pork and daikon soup has been a favorite since I was a kid. It’s very simple to put together and is great as part of a family style meal. A crucial step is to blanch the pork. This ensures a clean, clear broth. Hope you add this cozy soup to your dinner rotation!

Our recipe works for stovetop or in any rice cooker. If using Tatung rice cooker, add about 1 rice cooker cup of water to outer pot before starting. Add more water if additional cook time is needed. For those curious, my Tatung is the 11-cup size and you can get it here (affiliate link)!
Pork and Daikon Soup
Ingredients:
1 lb bone-in pork spare ribs
1 lb daikon radish, peeled and cut into chunks
3 cloves garlic, gently smashed
1-inch piece of ginger
6 cups water
1 tbsp Taiwanese rice wine (optional)
Salt and white pepper to taste
Cilantro for garnish
Method:
Blanch pork ribs for 3-4 minutes. Discard water. Rinse pork and pot thoroughly.
Place pork ribs back into pot and add in daikon, garlic, ginger, rice wine, and about 6 cups of water.
Let gently simmer for about 35-40 minutes or until daikon is softened.
To serve, season with salt and white pepper. Add cilantro for garnish. Enjoy hot.

Pork and daikon soup is such a specific comfort. The blanching step is the thing most people skip and then wonder why the broth is cloudy — glad you included it. This is exactly the kind of soup that tastes like someone's kitchen rather than a recipe.
